5 Bean Salad
This a great recipe in the summer, quick to throw together, cool and refreshing, and packed in protein too. It's not just a summer side, it's a great dish year round.
Ingredients:
5 cans assorted beans, drained and rinsed
ex: (kidney beans, chick peas, white/butter beans, black beans, green beans)
1 can corn, drained and rinsed
1 large red bell pepper, chopped
1 small bunch scallions, chopped
Directions:
1. Mix all ingredients in a large bowl, toss with dressing of choice ( I usually use Kens Italian Dressing)
2. Let salad chill in fridge for 1 hour
