Zucchini Casserole

Ingredients:

1/2 cup sliced onions

2lbs sliced zucchini

1 cup shredded carrots

1 cup sour cream

1 can cream of chicken soup

1 (8 ounce) stuffing mix bread crumbs

1/2 cup butter, melted

Directions:

1. Preheat oven to 350 degrees F.

2. boil onion and zucchini until tender and drain, mix together with carrots, sour cream, and soup

3. Place 1/2 of the breadcrumbs evenly in the bottom of a 9x13 baking dish

4. Pour zucchini mix over breadcrumbs and spread out evenly. Add the rest of the bread crumbs spread evenly over the top and drizzle melted butter over the top breadcrumb layer.

5. Bake for 30 minutes
