Corn Bread Casserole

This is my wife's late grandmothers recipe that we cook often as a side dish to my over indulgent meals to feed our army of friends!

Ingredients:

1 package Jiffy cornbread mix

1 egg

1 can cream-style corn

3-4 large onions, sliced

2 tbsp. butter

1 cup or small container sour cream

1 cup Colby cheddar cheese, shredded

Directions:

1. Preheat oven to 375 degrees F. In a medium bowl mix first 3 ingredients together, set aside

2. In a large fry pan add butter and onions, cook until onions are translucent, but not brown

3. Layer cooked onions in the bottom of a deep casserole dish, pour cornbread mix over onions and smooth out evenly

4. Dollop sour cream over top of cornbread mix layer and smooth out

5. Top off with shredded cheese, bake uncovered for 45 minutes

(This recipe CAN be DOUBLED!)
