Coconut curry poached cod loin


I came up with this recipe on the fly the other night and it was a big hit so I thought I'd share it. I love spicy foods and rarely go a day without adding something hot to it. Recently I began a love affair with coconut, a food I hated aside from coconut shrimp. Enough with the fluff, lets get down to it.

Ingredients

4 4 oz cod loin

2-3 tsp. Green Curry paste

2-3 tsp. Roasted Red Chili paste

1/2 can Coconut milk

1 tbsp. minced garlic

2 tbsp. olive oil

2 tsp. ginger paste

Salt to taste

Chili peppers/Powder (optional)

In a large sauté pan heat the olive oil over medium heat until it shimmers. Add the garlic and ginger, sauté for 1-2 minutes. Add the curry and chili pastes and sauté until combined. Pat the fish dry with a paper towel, move the spices to the outside of the pan and add the fish. Once the fish has been in the pan for 1-2 minutes add the coconut milk and stir to combine. Allow the fish to poach for another 2-3 minutes then flip. Allow the fish to cook in the curry until the fish flakes. Turning the heat up will allow the sauce to condense and develop a rich flavor. Spoon the sauce over the fish while it poaches. Move fish to plate and spoon sauce over it. Serve with your choice of sides. I made mine with my signature Coconut Ginger rice.
